In its appearance, it is crystal clear and radiant, with high viscosity. Its aroma is clean, distinct, balanced, deep, and intense. Ripe plum, plum jam, plum pit, marzipan, fresh floral notes, roasted hazelnuts, and almonds are present. There is also an exciting spiciness featuring vanilla, cloves, and cinnamon. Dark chocolate notes also appear. Ripe yet cool character. The palate is balanced, rounded, full, with a cool character and spiciness, and a nice core character. It is smooth, the alcohol does not protrude and barely bites; it has a velvety texture, and characteristics of dried plums along with dark chocolate notes appear in the long finish and in the dry test. It should be consumed chilled, on an empty stomach in the morning, or as a digestif.
This pálinka was made from the harvest of the estate’s half-hectare Beszterce plum orchard. We picked the plums in the second and third weeks of September, and after pitting, we fermented them in acid-resistant vats, preserving the characteristic aromas. The pálinka was made at the Bestillo distillery in Boldogkőváralja.
The winter was much milder and drier than average. The spring season brought the rain expected. The temperature was seasonally appropriate, but turned extremely hot by May. The temperature during the summer months was as we expected; this was only occasionally interrupted by torrential storms, which caused serious erosion damage. The harvest began on 4 September. The weather during the harvest was exceptionally favourable, which resulted in not only excellent base wines for sparkling wines, but also one of the most beautiful aszú vintages of the estate.
