In its appearance, it is crystal clear and radiant, with high viscosity. Its aroma is clean, distinct, intense and balanced. Elegant with a cool character. It is characterised by notes of quince jelly, spring white flowers, apple compote, preserved pear, and a spicy touch mainly of nutmeg with a hint of clove, complemented by a citrusy freshness. The mouthfeel is balanced, rounded, and full with a cool character and spiciness. A clear quince flavour is present; along with flavours of marzipan and apple pastries, but also with tartness characteristic of quince-pear. It has a waxy texture and a long, silky, flavourful finish. It can be consumed chilled as a digestif, or even alongside desserts.
At Béres Vineyard and Winery, we made pálinka for the first time in 2019 from the yield of the 800 quince trees planted in 2016. During the selection, we collected only the most beautiful fruits. We cleaned them one by one, and after grinding, we fermented them in a controlled manner. The distillation took place in Boldogkőváralja, at the Bestillo distillery.
