Yellow Muscat Grape Pálinka
In its appearance, it is crystal clear and radiant, with high viscosity. Its aroma is clean and very intense, immediately recognisable, bold, but not intrusive, showing a Muscat character. Table grapes, rose petals, rose oil, citrus notes, lychee, acacia flowers, and a restrained perfume are characteristic, behind which very faint notes of roasted nuts and walnuts, acacia honey, and sweet sponge cake can be detected. In the mouth, it is cooler and less sweet than expected based on its aroma, but not necessarily drier. It has a silky, balanced palate. Rich flavour profile, long, sweet finish with the grape variety’s clearly recognisable characteristics, alongside honeycomb, walnut paste, and ripe grape berries. It can be consumed chilled to accompany sweet treats or even as a standalone dessert.
The harvested, healthy yellow Muscat clusters were first de-stemmed. We then conducted the fermentation on the skins at 16°C, using controlled fermentation to preserve the grape’s aromas as much as possible. The distillation took place in Boldogkőváralja, at the Bestillo distillery.
The winter was much milder and drier than average. The spring season brought the rain expected. The temperature was seasonally appropriate, turning extremely hot by the end of May. The temperature during the summer months was as we expected; this was only occasionally interrupted by torrential storms, which caused serious erosion damage. The harvest began on 4 September. The weather during the harvest was exceptionally favourable, which resulted in not only excellent base wines for sparking wines, but also one of the most beautiful aszú vintages of the estate.
